Caribbean prawn skewers

    These refreshing prawn bites are a welcome change from heavy canapes. Skewer these spicy marinated prawns and serve on a platter. Or they are just as good tossed with greens for a delicious salad.

    Serves: 8 

    • 1 tablespoon vegetable oil
    • 2 tablespoons minced fresh root ginger
    • 2 limes, juiced
    • 2 cloves garlic, minced
    • 1 tablespoon soy sauce
    • 1/2 teaspoon caster sugar
    • 1/2 teaspoon crushed red chilli flakes
    • 900g cooked large prawns, peeled
    • 8 tablespoons chopped fresh coriander

    1. In a large bowl combine oil, ginger, lime juice, garlic, soy sauce, sugar and red chilli flakes; mix well. Stir in prawns and coriander. Cover and refrigerate 1 to 4 hours before serving. Stir occasionally while chilling.

    This shrimp recipe is really wonderful! Very easy to make - definately let it sit at least four hours as recipe says - also rinse shrimp off and pat dry before starting (I know this is common sense, but I totally forgot to do this the first time and it does make a difference!)  -  27 Mar 2002  (Review from Allrecipes US | Canada)


    The seasonings were delicious, but totally overwhelmed the shrimp rather than just accenting the shrimp.
