1 tablespoon vegetable oil
2 tablespoons minced fresh root ginger
2 limes, juiced
2 cloves garlic, minced
1 tablespoon soy sauce
1/2 teaspoon caster sugar
1/2 teaspoon crushed red chilli flakes
900g cooked large prawns, peeled
8 tablespoons chopped fresh coriander

In a large bowl combine oil, ginger, lime juice, garlic, soy sauce, sugar and red chilli flakes; mix well. Stir in prawns and coriander. Cover and refrigerate 1 to 4 hours before serving. Stir occasionally while chilling.
