Bread machine focaccia

    This easy focaccia is fantastic with a drizzle of olive oil and balsamic vinegar and a little grated Parmesan.

    Serves: 12 

    • 225ml (8 fl oz) lukewarm water
    • 2 tablespoons olive oil
    • 1/2 teaspoon salt
    • 2 cloves garlic, chopped
    • 2 sprigs fresh rosemary, stem removed and chopped
    • 400g (14 oz) bread flour
    • 1 1/2 teaspoons dried active baking yeast
    • 2 tablespoons olive oil
    • 3 sprigs fresh rosemary, stem removed and chopped

    1. Place water, 2 tablespoons olive oil, salt, garlic, rosemary, flour and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select Dough cycle; press Start.
    2. Remove dough from bread machine when cycle is complete. Pat dough into either a 23x33cm (9x13 in) baking pan or 30cm pizza pan. Use your fingers to dimple the dough every inch or so. Brush with remaining olive oil and sprinkle with remaining rosemary.
    3. Preheat oven to 200 C / Gas mark 6. Cover foccacia with cling film while oven preheats.
    4. Bake in preheated oven for 20 to 25 minutes, or until golden brown. Allow to cool for 5 minutes before serving.

    Altered ingredient amounts. added a spoonful of sugar, as I was sceptical it would rise without.  -  05 Oct 2008


    Used different ingredients. Added about 2oz of 1/2 inch cubed feta to dough before baking  -  30 Jun 2010


    V. easy to make and v. tasty. I made two smaller breads, one just with herbs and another with feta, both were really good. Also I left them to rise for almost two hours before baking. Will do them again and again. Many thanks.  -  01 Oct 2012
