    About this recipe: This heavenly cherry ice cream recipe results in a fabulous, dark shade of magenta. It has a tart flavour that kids (and adults) will love. I have been experimenting with cherry juice, and love this recipe!

    Serves: 4 

    • 60ml cherry juice or squash
    • 125ml skimmed milk
    • 220g low-fat vanilla yoghurt
    • 250ml double cream
    • 100g caster sugar
    • 1 pinch salt
    • 150g sweet cherries
    • 2 teaspoons almond extract

    Prep:10min  ›  Extra time:1hr freezing  ›  Ready in:1hr10min 

    1. Place the cherry juice, milk, yoghurt and double cream into the bowl of a blender. Add the sugar, salt, cherries and almond extract. Puree until only small bits of the cherries remain.
    2. Pour into a 1.5 litre ice cream maker and freeze according to manufacturer's directions.
