About this recipe:This heavenly cherry ice cream recipe results in a fabulous, dark shade of magenta. It has a tart flavour that kids (and adults) will love. I have been experimenting with cherry juice, and love this recipe!
60ml cherry juice or squash
125ml skimmed milk
220g low-fat vanilla yoghurt
250ml double cream
100g caster sugar
1 pinch salt
150g sweet cherries
2 teaspoons almond extract

Place the cherry juice, milk, yoghurt and double cream into the bowl of a blender. Add the sugar, salt, cherries and almond extract. Puree until only small bits of the cherries remain.
Pour into a 1.5 litre ice cream maker and freeze according to manufacturer's directions.
