The mixture was very thick but it cooked beautifully. I baked it in a large loaf pan for one hour and substituted cranberries and coconut chips for raisins. Delicious, easy and quick. Great recipe. - 21 Mar 2013
Made this with defrosted Mango Cubes I bought from Costco and was most impressed with the finished product! It's lovely tasted and so moist! I gave my two heating engineers a large slice each with a cup of tea when they were putting in my new boiler and they were most impressed and went away with a copy of the recipe!!
