    About this recipe: Fresh conch is simply prepared in this fresh-tasting ceviche with pineapple and coriander. It tastes delicious! Serve with tortilla chips for a unique and delightful party nibble.

    Serves: 8 

    • 900g fresh conch, removed from shell
    • 1/2 fresh pineapple - peeled, cored and chopped
    • 120ml water
    • 2 lemons, juiced
    • 45g chopped fresh coriander
    • 1 medium onion, chopped
    • 1 medium tomato, chopped
    • salt to taste

    1. Trim and peel the conch, and cut into small cubes. Place into a large bowl with the water, lemon juice, coriander, onion, pineapple, tomato and salt. Let stand at room temperature for 1 hour before serving.


    Conch can be found in some Caribbean markets.
