About this recipe: I received this tasty and easy recipe from my son's Cuban grandmother. Serve it over black beans and rice with fried plantain on the side - amazing!

    Serves: 8

    • 1.3kg minced beef
    • 1/2 onion, chopped
    • 2 tablespoons garlic, minced
    • 1 red pepper, chopped
    • 1 green pepper, chopped
    • 375g raisins
    • 2 (235g) jars green olives, drained and chopped
    • 340g tomato puree
    • 120ml water
    • 1/2 bunch coriander, chopped

    Prep:15min  ›  Cook:25min  ›  Ready in:40min

    1. Brown the minced beef in a casserole or large pot over medium-high heat until crumbly and no longer pink, about 10 minutes. Pour off any excess grease, then stir in the onion and garlic; cook for 2 minutes before adding the red pepper, green pepper, raisins, olives, tomato puree, water and coriander. Bring the mixture to the simmer, then reduce heat to medium-low, cover and simmer 10 minutes, or until the peppers have cooked to your liking.
