About this recipe:This is a hearty Cuban recipe that is made with easy to find ingredients. A friend taught it to me. A lovely mixture of minced beef, olives, black beans and spices served over brown rice.

375g brown rice
675g minced beef
2 tablespoons Cajun seasoning
1 onion, chopped
2 (400g) tins black beans
1/2 (350g) tin black olives, drained and chopped
4 tablespoons red wine vinegar
1/4 teaspoon chipotle powder (optional)
3 sprigs fresh coriander, chopped

Place rice and water in a saucepan over medium heat. Bring to the boil, then reduce heat to low and simmer for about 45 minutes, or until rice is tender.
While the rice is cooking, brown the minced beef in a deep frying pan or wok. Season with Cajun seasoning. When meat is almost done, add the onion, and cook until the meat is browned and the onion is translucent. Stir in the beans, olives, vinegar and chipotle powder, if using. Mix well, cover and simmer for 20 minutes over medium-low heat. Add the coriander during the last 5 minutes of cooking. Serve hot over or mixed with rice.
If you can't find chipotle powder, try using a chipotle paste, such as Discovery.
