Denise's rocket and orange salad

    This summery salad has lots of variety. Blue cheese also works very well instead of goat's cheese. I like to dress this with a simple vinaigrette of fresh basil, cider vinegar and olive oil.

    Serves: 6 

    • 2 small bags rocket, torn
    • 2 (295g) tins mandarin oranges, drained
    • 1 large red onion, thinly sliced
    • 1 punnet cherry tomatoes
    • 2 yellow peppers, seeded and diced
    • 145g unsalted sunflower seeds
    • 110g soft goat cheese, crumbled
    • 2 avocados - peeled, stones removed and sliced

    1. In a large bowl, combine rocket, oranges, onion, tomatoes and yellow peppers. Toss with dressing of your choice. Top with sunflower seeds, goat cheese and avocados.

    Made this for a dinner party that we went to instead of our usual mandarin orange salad, when we realised that the host was diabetic...this turned out fantastic and received much praise from all the guests. We used pine nutes instead of sunflower as we do not really care for the latter and it worked fine...the arugula (aka rocket) is just an outstanding salad flavour. Salad is not overly leafy and the colours are very appealing. We dressed with a simple balsamic vineagrette.
