This is a tried and true colcannon recipe. Cheap, simple and delicious, it is the ultimate comfort food for a chilly autumn or winter evening. You could use kale instead of cabbage, if preferred.

Prepared this with my Irish Steaks for dinner this evening...kind of plain tasting, but good. I added some chopped bacon and used sour cream for the milk/cream to mash potatoes. Will make again and add more onion and black pepper... - 29 Mar 2012
