Easy colcannon

    This is a tried and true colcannon recipe. Cheap, simple and delicious, it is the ultimate comfort food for a chilly autumn or winter evening. You could use kale instead of cabbage, if preferred.

    Serves: 6 

    • 900g potatoes, peeled and cubed
    • 1 cabbage, chopped
    • 1 bunch spring onions, chopped
    • 50g butter, softened
    • 125ml single cream
    • salt and black pepper to taste

    1. Place the potatoes, cabbage and spring onions into a large sauce pan, fill with water, and bring to the boil. Reduce heat, cover and simmer until the potatoes are tender, about 20 minutes.
    2. Drain the vegetables and place into a large bowl. Mash the potatoes and vegetables with the butter using a fork until the mixture is chunky, pouring in cream gradually as you mash. Season with salt and pepper, and serve.

    Took shortcuts. Didn't have spring onions so just used an ordinary onion chopped up  -  03 Apr 2011


    Prepared this with my Irish Steaks for dinner this evening...kind of plain tasting, but good. I added some chopped bacon and used sour cream for the milk/cream to mash potatoes. Will make again and add more onion and black pepper...  -  29 Mar 2012
