About this recipe: This salad makes a wonderful lunch and is a great way to experiment with red currants. I couldn't find one recipe that used fresh red currants that wasn't a jam or dessert so I made this one up.


Serves: 6 

  • 1 head cos lettuce, rinsed, patted dry and chopped
  • 100g rocket, washed and dried
  • 100g sliced mushrooms
  • 150g baby plum tomatoes, halved
  • 1 shallot, thinly sliced
  • 100g fresh red currants
  • 60g grated Gruyere cheese
  • 100g honey roast ham, chopped
  • 4 tablespoons balsamic vinegar
  • 4 tablespoons extra virgin olive oil
  • salt and pepper to taste

  1. Toss together the cos, rocket, mushrooms, tomatoes, shallot, currants, cheese and ham in a large salad bowl. Whisk together the balsamic vinegar, olive oil, salt and pepper in a small bowl until mixed. Pour over the salad and toss to coat.
