About this recipe:This salad makes a wonderful lunch and is a great way to experiment with red currants. I couldn't find one recipe that used fresh red currants that wasn't a jam or dessert so I made this one up.
1 head cos lettuce, rinsed, patted dry and chopped
100g rocket, washed and dried
100g sliced mushrooms
150g baby plum tomatoes, halved
1 shallot, thinly sliced
100g fresh red currants
60g grated Gruyere cheese
100g honey roast ham, chopped
4 tablespoons balsamic vinegar
4 tablespoons extra virgin olive oil
salt and pepper to taste

Toss together the cos, rocket, mushrooms, tomatoes, shallot, currants, cheese and ham in a large salad bowl. Whisk together the balsamic vinegar, olive oil, salt and pepper in a small bowl until mixed. Pour over the salad and toss to coat.
