1 tablespoon vegetable oil
2 medium shallots, diced
1 dessertspoon minced fresh ginger root
250g (9 oz) shredded red cabbage
250 (9 oz) shredded green cabbage
225ml (8 fl oz) Guinness
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper

Heat the oil in a frying pan over medium-high heat. Place shallots and ginger in the frying pan, and cook until tender. Mix in red cabbage and green cabbage, and cook about 2 minutes. Pour in the Guinness. Season with salt and pepper.
Reduce heat to medium, cover frying pan, and continue cooking 5 minutes, or until cabbage is tender.
The flavor of the Ginger was great it meddled so well with the cabbage. Still more flavor was needed.The beer left a little bit of a bitter after taste. Maybe adding apple slices or pears would help. - 27 Mar 2012
