    Pizzelle are crisp Italian wafers with a special patterned iron. This particular recipe calls for chocolate and ground nuts, though basic pizzelle are most often flavoured with anise, vanilla or lemon.

    Ingredients
    Serves: 18 

    • 40g ground walnuts
    • 280g plain flour
    • 4 tablespoons unsweetened cocoa powder
    • 1 tablespoon baking powder
    • 3 eggs
    • 200g caster sugar
    • 75g butter, melted
    • 2 teaspoons vanilla extract

    Method

    1. In a medium bowl, stir together the ground nuts, flour, cocoa and baking powder; set aside. In a separate bowl, beat eggs on the high speed of an electric mixer, gradually add the sugar and mix until thick and yellow. Stir in the melted butter and vanilla. Gradually stir in the flour mixture, just mixing enough to combine.
    2. Heat up the pizzelle iron until a drop of water dances on the surface, then slightly reduce heat. Drop 1 rounded tablespoon of batter for each pizzella. Close the lid and bake for about 2 minutes, depending on your iron. Turn pizzella out and trim before cooling on racks.

    I used pecans instead of the walnuts to make these chocolate pizzelles. By melting the butter in a large pan, the need for a bowl is eliminated! With or without the chocolate frosting glaze, these are good!  -  16 Jun 2008  (Review from Allrecipes US | Canada)
