Mushroom Plantain Pitta Sandwich

    This delicious sandwich will beat most sandwiches in flavour and texture. The filling consists of fried plaintain, avocados, portabello mushrooms and wild rocket. It's absolutely delicious!

    Serves: 4 

    • 175ml coconut oil
    • 1 semi-ripe plantain, cut into 5cm pieces
    • 3 portabello mushroom caps, cut into strips
    • 1 avocado, peeled, pitted and sliced
    • 80g wild rocket, roughly chopped
    • 2 pitta breads, warmed, cut in half

    1. Heat the coconut oil in a frying pan over medium heat and cook the plantain pieces just until tender but still firm. Remove from heat and drain on kitchen towels. Stand the plantain pieces on end and with a small dish or the bottom of a cup, gently flatten the plantains. Return to oil and continue cooking until golden brown. Remove from heat and drain on kitchen towels.
    2. Place the mushrooms in the frying pan with remaining coconut oil over medium heat and cook until tender.
    3. Stuff pitta bread halves with equal amounts of the plantain, mushrooms, avocado and rocket to serve.


    If your local supermarket doesn't stock coconut oil, you will find it in health food stores or online.

    This was such an excellent combination of flavors and textures! Sweet, savory, creamy, crispy--wonderful! And it was so easy to make. I think this would also make a great salad--with the oil from the mushrooms and the avocado, you wouldn't even need dressing.
