Heat the vegetable oil in a large frying pan over medium heat and brown the pork chops on both sides, 5 to 8 minutes per side.
Whisk together the water, gravy mix, dark brown soft sugar, vinegar and garlic granules in a bowl until the sugar is dissolved and the mixture is smooth. Pour the gravy mixture over the browned pork chops. Cover the frying pan, reduce heat to low and simmer until the chops are tender, about 30 minutes.
