Cereal Bread

    An easy recipe using Grape-Nuts cereal which you can find in most supermarkets.

    Serves: 12 

    • 85g (3 oz) Grape-Nuts
    • 300ml (1/2 pint) buttermilk
    • 150g (5 oz) caster sugar
    • 1 teaspoon salt
    • 1 egg
    • 1 teaspoon bicarbonate of soda
    • 30g (1 oz) butter, melted
    • 250g (9 oz) plain flour

    1. In a small bowl, soak cereal in buttermilk for 1 hour.
    2. Preheat oven to 180 C / Gas mark 4. Grease and flour a 23x12cm (9x5 in) loaf tin.
    3. In a large bowl, combine buttermilk mixture, sugar, salt, egg and bicarbonate of soda. Stir until sugar dissolves. Mix in the melted butter and the flour. Pour batter into prepared loaf tin.
    4. Bake in preheated oven for about 45 minutes. Bread is done when a cocktail stick inserted into the centre of the loaf comes out clean.

    An easy, delicious, and moist bread. It's a favourite of people at our church, my brother and his wife, and our neighbours. If your kids don't like it, perfect! That just means there's more healthy, yummy bread left for the adults to enjoy. Great for breakfast, especially with butter.  -  14 Jul 2008


    This would be good for a brunch. No one ate it at my house and I had to throw 1/2 of it away. My children did not hate it, but they did not attack it like they do most of my breads. They did not eat the pieces they had. This was just an average recipe.  -  14 Jul 2008


    This is very good, and forgiving; I forgot the bicarb (horrors) and, 5 minutes into baking, took the thing out of the oven and stirred it in...still came out fine. I used fake buttermilk (1.25 tsp lemon juice left in the milk for 10 mins on the counter) and the bread was nice and moist because of soaking the cereal in milk. Good with honey or on its own, and very easy to work with.  -  14 Jul 2008
