Butter Sponge Cake

    A buttery sponge cake base is topped with a sweetened cream cheese mix. It's a very rich cake, with the topping tasting similar to cheesecake. Serve on its own or with fresh berries.

    Makes: 24 squares

    • 1 egg
    • 520g sponge cake mix
    • 110g unsalted butter, softened
    • 225g cream cheese, softened
    • 450g icing sugar, sieved
    • 2 eggs
    • 1 teaspoon vanilla extract

    Prep:15min  ›  Cook:35min  ›  Ready in:50min 

    1. Preheat oven to 180 C / Gas 4. Grease and flour one 23x33cm or similar sized tin.
    2. Beat together 1 egg, sponge cake mix and butter for 5 minutes. Mix and pour into prepared tin.
    3. Cream together cream cheese, icing sugar, 2 eggs and vanilla extract. Pour this on top of the cake base.
    4. Bake 35-40 minutes until browned. Cool 15 minutes and cut into squares.

    You have to understand that true Philadelphia buttercake, bought on the boulevard in the northeast section of Philly, is gooey and very sweet-you should try it with a can or pie filling cherries on it-almost as good as the bakery version!  -  08 Nov 2009  (Review from Allrecipes US | Canada)
