About this recipe: A buttery sponge cake base is topped with a sweetened cream cheese mix. It's a very rich cake, with the topping tasting similar to cheesecake. Serve on its own or with fresh berries.


Makes: 24 squares

  • 1 egg
  • 520g sponge cake mix
  • 110g unsalted butter, softened
  • 225g cream cheese, softened
  • 450g icing sugar, sieved
  • 2 eggs
  • 1 teaspoon vanilla extract

  1. Preheat oven to 180 C / Gas 4. Grease and flour one 23x33cm or similar sized tin.
  2. Beat together 1 egg, sponge cake mix and butter for 5 minutes. Mix and pour into prepared tin.
  3. Cream together cream cheese, icing sugar, 2 eggs and vanilla extract. Pour this on top of the cake base.
  4. Bake 35-40 minutes until browned. Cool 15 minutes and cut into squares.
