About this recipe: This chicken is moist and delicious. It's roasted with olive oil, garlic, onions, orange juice, lemon juice and white wine. Serve as an alternative to the traditional roast at Sunday lunch.


Serves: 4 

  • 6 tablespoons olive oil, divided
  • 6 cloves garlic, finely chopped
  • 2 onions, chopped
  • 125ml orange juice
  • 125ml lemon juice
  • 4 tablespoons white wine
  • 1 (1.8kg) whole chicken, cut into 4 pieces
  • salt and pepper to taste

  1. Preheat oven to 180 C / Gas 4.
  2. Heat 3 tablespoons of the oil in a medium frying pan over medium heat. Add the garlic and saute for 1 minute; set aside.
  3. In a separate medium bowl, combine the remaining oil, onion, orange juice, lemon juice and wine. Add the heated garlic and oil to this and mix well.
  4. Place chicken pieces in a 23x33cm or similar sized baking dish and pour the juice mixture over the chicken, coating well.
  5. Bake at 180 C / Gas 4 for 1 hour, basting occasionally with the sauce.
