    About this recipe: Delicious burgers made from salmon. Try them as an alternative to a beef burger. Serve in a sandwich bun, with rice, potatoes or pasta and a side of vegetables.

    Makes: 8 burgers

    • 2 (418g) tins pink salmon
    • 1 onion, finely diced
    • 1 egg, beaten
    • 8 Doriano Italian crackers, crushed
    • salt and pepper to taste
    • 1 stick celery, finely chopped
    • 120g cornmeal or fine polenta
    • 2 tablespoons rapeseed oil

    1. In a medium size mixing bowl combine salmon, onion, egg, crackers, salt, pepper and celery. Mix well.
    2. Make burgers out of salmon mixture and roll in cornmeal.
    3. In a large frying pan over medium high heat oil for frying. Place salmon burgers in oil and fry on both sides until golden brown. Drain well. Serve warm.

    I wasnt expecting much from this recipe - but WOW! theyre surprisingly yum! and only 100kcals each (if you make 8 burgers, but i really think its more like 6 out of this recipe) will be making these again for sure! - 08 Apr 2011
