Slow cooker pulled chicken

    This slow cooker recipe will transform a dull piece of chicken into a flavoursome piece of meat. The chicken is shredded and served with a homemade barbecue sauce in a sandwich roll. It's like the American classic pulled pork, except made with chicken. You can also serve the chicken over rice.

    Makes: 8 sandwiches

    • 4 large skinless, boneless chicken breast fillets
    • 250ml ketchup
    • 2 tablespoons mustard
    • 2 teaspoons lemon juice
    • 1/4 teaspoon garlic granules
    • 125ml maple syrup
    • 2 tablespoons Worcestershire sauce
    • 1/2 teaspoon chilli powder
    • 1/8 teaspoon cayenne pepper
    • 2 dashes hot sauce or to taste
    • 8 rolls or baps, split

    1. Place the chicken breasts into the bottom of a slow cooker. In a bowl, stir together the ketchup, mustard, lemon juice, garlic granules, maple syrup, Worcestershire sauce, chilli powder, cayenne pepper and hot sauce until the mixture is well blended.
    2. Pour the sauce over the chicken, set the cooker to Low, and cook for 6 hours. Shred the chicken with two forks and cook for 30 more minutes. Serve the chicken and sauce spooned into the sandwich rolls.

    nice, had to use golden syrup instead of maple. Didn't need 6 hrs though mine was ready at 5hrs. Had it with mash and enjoyed it.  -  06 Jan 2012
