Cheats cassoulet

    This cassoulet is made in a slow cooker and requires no effort to make. Chicken, beans and smoked sausages are cooked together for 5 hours, resulting in a highly flavoursome dish. Serve with rice or potatoes and a side of crusty bread.

    Makes: 6 

    • 900g skinless, boneless chicken breast fillets, cut into chunks
    • 1 onion, quartered and thinly sliced
    • 2 large cloves garlic, finely chopped
    • 4 tablespoons chopped fresh parsley
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 2 (410g) tins cannellini beans, drained and rinsed
    • 450g turkey kielbasa, cut into 1cm slices
    • 5 tablespoons dry white wine

    1. Place the chicken into the bottom of a slow cooker. Stir together the onion, garlic, parsley, salt, pepper, cannellini beans and kielbasa in a large bowl. Pour the mixture over the chicken in the slow cooker and pour the wine over all the ingredients. Cover, set the cooker to Low and cook until the chicken is very tender and the cassoulet is thickened, 5 to 6 hours.


    Kielbasa are smoked Polish sausages and are available at Polish delis. If unavailable, substitute in Mattessons smoked pork sausage.

    I made this Friday night for dinner. Everything I used in this recipe was bought at Grocery Outlet, even a good local wine for 2.99! I used organic cannellini beans and omitted the salt. I really enjoyed this as did my husband, great basic flavors of each ingredient all coming together nicely. My kids didn't care for it but that meant there was more for me the next day. The crusty bread is a must have with this dish to sop up all those juices, cooksforfourty is absolutely right. And you know, I think this was even better the next day, if that was possible.     The whole family really enjoyed this for dinner last night. I subbed chicken broth for the white wine. I used canned navy beans, they kind of dissapeared while it was cooking. The chicken and sausage was so good!! I served with mashed potatoes on the side. This would be good ontop of egg noodles too.     5 Stars! But I did make a couple changes to suit my family. First, used mild italian sausage and browned meats before adding to crock pot - not necessary, but does add a nice flavor. Second - Added 1 cup chicken stock along with the wine for more sauce. Last - thickened the juices with water and corn starch before serving.
