About this recipe:This is a simple, yet delicious sauce. It's made by pan-roasting garlic, chillies, onion and tomatoes, then pureeing them in a liquidiser. Roasting the ingredients brings out the flavours, making this an intensely flavoured tomato sauce.
Makes: 600 ml
1 clove garlic, peeled
4-5 Scotch bonnet chillies or to taste
1/2 onion, cut into 4 wedges
10 plum tomatoes
sea salt to taste

Cover a large frying pan with foil and heat over medium-high heat on the hob. Roast the garlic, chillies, onion and tomatoes, turning frequently, until lightly blackened, but not burned, about 5 minutes for the garlic, 10 minutes for the peppers and onions and 15 minutes for the tomatoes. Set aside to cool.
Blend the garlic, chillies, onion, tomatoes and salt in a liquidiser or food processor until smooth. Store covered in the refrigerator for up to 1 week.
