Roasted Tomato Sauce

    This is a simple, yet delicious sauce. It's made by pan-roasting garlic, chillies, onion and tomatoes, then pureeing them in a liquidiser. Roasting the ingredients brings out the flavours, making this an intensely flavoured tomato sauce.

    Makes: 600 ml

    • 1 clove garlic, peeled
    • 4-5 Scotch bonnet chillies or to taste
    • 1/2 onion, cut into 4 wedges
    • 10 plum tomatoes
    • sea salt to taste

    1. Cover a large frying pan with foil and heat over medium-high heat on the hob. Roast the garlic, chillies, onion and tomatoes, turning frequently, until lightly blackened, but not burned, about 5 minutes for the garlic, 10 minutes for the peppers and onions and 15 minutes for the tomatoes. Set aside to cool.
    2. Blend the garlic, chillies, onion, tomatoes and salt in a liquidiser or food processor until smooth. Store covered in the refrigerator for up to 1 week.
