575g frozen chopped spinach
225g feta cheese, crumbled
225g mozzarella cheese, grated
175g processed cheese slices, roughly chopped
225g butter, melted and divided
2 tablespoons vinegar
1/2 teaspoon garlic granules
salt and pepper to taste
450g filo pastry sheets

Preheat oven to 220 C / Gas 7.
In a large bowl, combine the spinach, feta cheese, mozzarella cheese, processed cheese, 1/2 the butter, vinegar, garlic granules, salt and pepper. Mix well and set aside.
Place a layer of filo pastry into the bottom of a lightly greased 2 litre baking dish. Spread the spinach and cheese mixture into the dish and top with 4 layers of filo pastry, spraying each layer with cooking oil spray. Drizzle the remaining butter over the top.
