Strawberry Bruschetta

    This is a delicious, fruity variation of the popular Italian starter that you could serve as dessert! The strawberries are warm and sweet and the sugar is caramelised and crunchy. Your guests will love it!

    Serves: 12 

    • 1 French baguette, sliced into 24 pieces
    • 1 tablespoon butter, softened
    • 200g fresh strawberries, sliced and chopped
    • 4 tablespoons caster sugar, or as needed

    Prep:5min  ›  Cook:15min  ›  Ready in:20min 

    1. Preheat the grill. Spread a thin layer of butter on each slice of bread. Arrange bread slices in a single layer on a large baking tray.
    2. Place bread under the grill for 1 to 2 minutes, just until lightly toasted. Spoon some chopped strawberries onto each piece of toast, then sprinkle sugar over the strawberries.
    3. Place under the grill again until sugar is caramelised, 3 to 5 minutes. Serve immediately.

    loved it however i found that grilling for an extra 5 minutes burnt the crust of the bread so i used a blowtorch for about 20 seconds seems to have done the trick but nice twist on a classic  -  10 May 2012


    I had this today for the very first time and it was fabulous with the following addition: Butter bread, then sprinkle with cinnamon-sugar mixture.     I make a strawberry bruschetta , except I toast a nutty hearty bread, and spread with a mascarpone cheese flavored with honey and they put strawberries on top, with a sprig of mint.
