About this recipe:This is an easy summer salmon dish. The salmon steaks are cooked gently on the bbq and brushed with a sweet and sticky glaze.
6 tablespoons butter
330g dark brown sugar
4 1/2 tablespoons lemon juice
2 1/4 teaspoons dried dill
3/4 teaspoon ground cayenne pepper
450g salmon fillets, with skin
1 pinch lemon pepper to taste

Preheat the barbecue for high heat.
Melt the butter in a saucepan over medium heat, and mix in the dark brown sugar, lemon juice, dill and cayenne pepper. Cook and stir until the sugar is dissolved. Reduce heat and simmer until ready to brush onto the salmon.
Season salmon with lemon pepper. Place directly on the barbecue grate, skin side down. Brushing frequently with the butter and dark brown soft sugar glaze, cook the salmon for 15 to 20 minutes, or until easily flaked with a fork. Reserve some of the glaze for serving.
