    About this recipe: This wonderful cake is simple and delicious. It's gooey in the middle and meringue-like on the top. Enjoy as a dessert, afternoon tea or elevenses.

    Serves: 8 

    • 2 eggs
    • 250g caster sugar
    • 75g unsalted butter
    • 140g flour
    • 55g dry breadcrumbs
    • 50g flaked almonds

    1. Preheat oven to 200 C / Gas 6. Grease a 23cm springform tin and sprinkle with dry breadcrumbs.
    2. Stir together the egg and sugar. Melt butter and stir into mix. Add flour; mix until smooth, but not fluffy. Spread the batter into the prepared tin. Sprinkle flaked almonds on top.
    3. Bake for 25 minutes. Allow cake to cool slightly before removing from the tin. Cool completely on a wire rack. This cake keeps very well for up to a week in an airtight container or plastic bag.
