Egg-free vanilla ice cream

    This is a super-easy vanilla ice cream recipe, which requires no ice cream machine. Evaporated milk is mixed with whipped cream, vanilla and condensed milk, then frozen.

    Serves: 10 

    • 150ml double cream, whipped
    • 350ml evaporated milk
    • 1/2 (397g) tin sweetened condensed milk
    • 1 1/2 teaspoons vanilla extract

    1. Beat whipped cream, evaporated milk, condensed milk and vanilla in a large bowl until smooth. Pour into a round or rectangular container, seal tightly and place in freezer for 24 hours.

    It is just lovely ice cream better than any shop bought and that includes the premium brands. I doubled the recipe as lots of mouths to feed at chrismas 5 star+ 22 Jan 18 I loved this recipe so much I decided to tweak it , I changed the condensed milk for caramel condensed milk , put in the freezer for a 1 hr then took it out and added chopped up mini chocolate eggs  -  25 Dec 2017


    This is excellent. I added Oreos to this and made the ice cream in a Cuisinart ice cream & frozen yogurt maker. The thing I like best about this recipe is the fact that this remains semi-soft and creamy in the freezer, unlike other homemade ice creams which always turn rock hard. I plan on using this recipe a lot, and I think it is easily customizable to make whatever flavor you want. I already have plans to add chocolate, strawberries... All sorts of things!
