    About this recipe: This sauce is packed full of flavour and is quick and easy to make. Portabello, crimini, shiitake, morel and chanterelle mushrooms are simmered in a demi-glace. Enjoy with grilled meats, if desired.

    Serves: 4 

    • 60g butter
    • 4 tablespoons finely chopped shallots
    • 60g portabello mushrooms, sliced
    • 60g crimini mushrooms, sliced
    • 60g shiitake mushrooms, sliced
    • 60g morel mushrooms, sliced
    • 60g chanterelle mushrooms, sliced
    • 125ml red wine
    • 175ml beef demi-glace
    • salt and freshly ground black pepper to taste

    1. Melt butter in a saucepan over medium heat. Saute shallots briefly, then stir in all of the mushrooms. Saute until tender and translucent, about 3 minutes. Pour in red wine and simmer for 3 minutes. Stir in demi-glace and simmer for 6 minutes or until sauce has thickened.
