    About this recipe: A lovely blend of tomato, garlic, basil and spices. Cheap, easy, fresh and full of flavour.

    Serves: 2 

    • 250g pasta of choice
    • 1 onion, chopped (red if preferred)
    • 1/2 courgette, sliced and halved
    • 1 pepper, chopped (red, green or orange)
    • 6 to 8 black olives
    • 6 to 8 green olives
    • 1 tin tomatoes (whole or chopped)
    • drizzle balsamic vinegar
    • drizzle Nandos Hot Peri Peri Sauce (or alternative chilli sauce)
    • 1 pinch black pepper
    • 1 pinch coriander
    • 1 pinch paprika
    • 1 pinch ginger
    • 1 pinch parsley
    • 30 to 40g garlic puree
    • generous helping fresh basil leaves

    1. Cook enough pasta for two.
    2. Toss onion, courgette and pepper into lightly oiled frying pan along with olives. Fry for 4 to 5 minutes.
    3. Add tinned tomatoes and stir. Add balsamic vinegar and ALL spices, peri peri sauce and lastly garlic puree. Stir in torn basil leaves.
    4. Stir until thickish consistency. Serve over pasta.
