Auntie Charly's Corn Chowder

    Auntie Charly was a wonderful cook, whose corn chowders were legendary.

    Serves: 4 

    • 1 large onion, chopped
    • 1 clove garlic, crushed
    • 4 rashers bacon, chopped
    • 60g butter
    • 1 tablespoon flour
    • 1 litre chicken stock
    • 1 (250g) tin sweetcorn
    • 1 large potato, cubed
    • 60ml double cream

    Prep:10min  ›  Cook:35min  ›  Ready in:45min 

    1. Gently cook onion, garlic and bacon for 4 to 5 minutes until soft.
    2. Stir in the flour and cook out for 1 to 2 minutes
    3. Gradually add hot chicken stock, bring to the boil and then simmer for 5 minutes.
    4. Add sweetcorn and potatoes, season with salt and pepper, then simmer for 20 minutes.
    5. Add the double cream. Blend 1/2 of the soup in a blender or with an immersion blender. Serve.


    Replace olive oil for the butter, and milk for the double cream if you want a low fat version.
