    About this recipe: Have a great start to your day with this easy to cook, filling omelette. It's filled with vegetables, bacon and sausage.

    Ingredients
    Serves: 1 

    • 3 tablespoons oil for frying, divided
    • 2 slices bacon
    • 1 sausage
    • 3 closed cup mushrooms, sliced
    • 1 large tomato, sliced
    • 2 spring onions, sliced (optional)
    • 3 eggs
    • 1 dash hot pepper sauce
    • salt and pepper to taste

    Method
    Prep:5min  ›  Cook:10min  ›  Ready in:15min 

    1. In a large pan heat 1 tablespoon of oil and fry the bacon, sausage, sliced mushrooms, tomatoes and onions.
    2. Meanwhile beat 3 eggs in a bowl and add a splash of hot pepper sauce with salt and pepper; mix well.
    3. Chop up the bacon and sausage when cooked and either add the remaining oil and increase the heat then pour the egg mixture in, stirring till the egg sets and then turnover to brown both sides, or as I do use another frying pan (7") to cook the eggs until brown and add the ingredients on top, no need to turn over - just more washing up!
