About this recipe: A really easy traybake cake that just about anyone should be able to make! Add any food colouring to the cake mixture, pink for girls or even blue for boys. Alternatively add cocoa powder for chocolate flavoured cake and to the icing too.

Serves: 20 

  • 170g (6 oz) caster sugar
  • 225g (8 oz) self-raising flour
  • 170g (6 oz) butter
  • 2 eggs
  • 2 tablespoons milk
  • few drops food colouring
  • Icing
  • 110g (4 oz) icing sugar
  • few drops food colouring
  • warm water
  • sugar balls

  1. Preheat the oven to 180 C / Gas 4 and line your desired tray (any tray works well but cooking time will very depending on size).
  2. Add all the ingredients to a bowl and mix using electric whisk.
  3. Using spatula scrape cake mixture into tray and smooth out.
  4. Place in the oven for around 30 minutes or until it starts to come away from the edges and is springy to the touch. Use a cocktail stick to test whether it is cooked right through.
  5. Once cooked turn out onto a cooling rack and leave to cook, whilst preparing the icing.
  6. Sift icing sugar into a bowl and add a few drops of food colouring and water until you reach the desired consistency. It's much easier to spread if it thick enough to coat the back of the spoon.
  7. Spread all over the top of the cake and add the sugar balls or any other decoration. Leave to set, cut into around 20 pieces and enjoy!

this cake worked fine, i added a tsp of baking powder as my cakes don't rise that well in this oven - did it in an 11in by 9in swiss roll tin for 30 mins - 11 Sep 2012
