Apricot and Amaretti Ice Cream

This is a relatively simple to make ice cream which is quite impressive on the taste front. A neighbour gave it to me some long time ago and we regularly use it when entertaining.

Ingredients
Serves: 4
- 284ml double cream
- 370g or 1 jar of good quality apricot jam
- juice of half a lemon
- 2 tablespoons Amaretto
- 25g amaretti biscuits, broken up

- Whip cream until it holds its shape.
- In a separate bowl mix the jam, lemon juice and liqueur.
- Fold the cream into the mix and then the biscuits.
- Put into an ice cream maker and churn until firm.
