    About this recipe: A very refreshing fruit soup, served chilled. Great for lunchtime parties. Garnish with mint if desired.

    Ingredients
    Serves: 6 

    • 1 cantaloupe - peeled, seeded and diced
    • 475ml (16 fl oz) orange juice
    • 1/2 lime, juiced
    • 1/4 teaspoon ground cinnamon

    Method

    1. Place cantaloupe and half the orange juice in a blender or food processor; process until smooth. Transfer to large serving bowl. Stir in lime juice, cinnamon and remaining orange juice. Cover, and refrigerate for at least one hour. Garnish with mint if desired.

    This is a perfect soup to go with a cool summer lunch. Easy and simple. I struggled with the kid rating. My daughter loved it, but a friend was resistant to even try a cold soup made with fruit. Bon appetit! - 21 Jul 2008
