Spicy bean bake

    Warming winter one pot cheap supper. Beans, potatoes and sausages with a spicy twist. Children and husband love this dish with lots of oohs and aahs when eating.

    Serves: 4 

    • 8 - 10 potatoes, peeled and quartered
    • 8 - 10 Cumberland sausages
    • 1 large onion, chopped
    • 2 (450g) baked beans
    • 1 tablespoon curry powder
    • Cheddar cheese slices to cover casserole
    • grated cheese to sprinkle on top
    • 1 knob butter
    • 50ml milk

    1. Preheat the oven to 180 C / Gas 4. Peel and quarter potatoes put on to boil.
    2. Grill sausages until brown, then cut into small chunks.
    3. Chop onions and fry until soft and brown.
    4. Pour both cans of beans into a casserole. Mix in curry powder. stir in fried onions and sausage chunks. Cover with cheese slices.
    5. Mash potatoes with butter and milk. Spread potatoes over beans and cheese, sprinkle cheese over potatoes.
    6. Place in oven for 30 minutes until brown and bubbling. Serve with a green salad.

    Freezing tip

    Any leftovers can be frozen.

    Used different ingredients. only because i had no curry powder at the time i added tbsp garlic granuals, tbsp pepper sauce, tbsp tomato ketchup and tbls worster sauce to the beans  -  28 Oct 2010
