    About this recipe: Low fat sugarless fruit loaf, high in fibre. It's very healthy snack for coffee or tea time. It is also dairy free.

    Ingredients
    Serves: 12 

    • 200g raisins or sultanas
    • 225 ml pure apple juice
    • 100g mashed banana
    • 1 egg
    • 1 egg white
    • 200g wholemeal flour
    • 25g wheat bran
    • 1 1/2 teaspoons mixed spice or ground cinnamon
    • 1/2 teaspoon salt

    Method
    Prep:1day  ›  Cook:1hr5min  ›  Ready in:1day1hr5min 

    1. Soak dried fruit in fruit juice overnight.
    2. Preheat the oven to 180 C / Gas 4. Line a 2 lb loaf tin with greaseproof paper.
    3. Mash banana and add beaten egg and egg white. Combine with fruit and juice. Mix dry ingredients and combine with fruit and egg mixture. Tip into the prepared tin.
    4. Bake until a skewer inserted near the centre comes out clean, about 70 minutes.

    I do apologise I should say no added refined sugar for all the people who cannot work out for themselves that fruit contains natural sugar - 18 Jun 2011

    This recipe is quite misleading as fruit juice and dried fruit in particular naturally has quite a high sugar content. - 18 Mar 2011
