Welsh fruit loaf

    Easy to make fruit loaf, suitable for all the occasions when you have friends around. Nice with a cuppa.

    Makes: 10 Slices

    • 170g sultanas
    • 150g currants
    • 200g sugar
    • 250ml water
    • 90g margarine
    • 250g self-raising flour
    • 1 pinch salt
    • 1/2 teaspoon bicarbonate of soda

    1. Preheat the oven to 180 C / Gas 4.
    2. Place sultanas, currants, sugar, water and margarine into a saucepan and bring all ingredients to a boil, stirring regularly. Simmer for about 5 minutes.
    3. Pour the mixture into a bowl and add flour, salt and bicarb and mix well. Pour into a loaf tin.
    4. Bake in the preheated oven for 75 minutes. Use a skewer to pierce loaf and if it comes out clean the loaf is cooked. Enjoy xxx


    This loaf is best serve a day or so old with plenty butter on top.
    For a different variation replace a quarter of the water with rum, and add a tablespoon of treacle when simmering for that added depth in taste.
    This loaf can be frozen easily
