Cheesy tuna pasta

    If you love tuna and mozzarella, then this recipe is for you! A very fishy and cheesy pasta dish.

    Serves: 4 

    • 400g penne pasta (or other short pasta)
    • 1 tablespoon capers in brine or salt, rinsed
    • 2 cloves garlic
    • 45g fresh parsley, finely chopped
    • 200g canned tuna in sunflower/olive oil, drained
    • 5 tablespoons olive oil
    • salt and pepper as needed
    • 250g mozzarella cheese, diced

    1. Bring a big pan of salted water to the boil. Drop in the pasta.
    2. Finely chop the capers with the garlic, and combine them with the parsley. Mix them with the tuna and olive oil in a bowl and season with salt and pepper if necessary.
    3. When the pasta is cooked drain it through a colander. Return to the pan and add the tuna sauce and the mozzarella. Cook over moderate heat, stirring occasionally. Make sure when you do stir to scrape the bottom of the pan, to prevent the pasta from sticking. When the cheese is just beginning to melt remove from the heat and serve immediately.

    Serving suggestion

    Serve with bread, salad and Parmesan cheese.

    Make it healthier

    If you are not a great fan of cheese the recipe will still be nice with half the amount of mozzarella.
