    About this recipe: A different and unique ice cream that calls for a very familiar ingredient. The digestive biscuits give this simple vanilla ice cream a wonderful texture and flavour.

    Serves: 8 

    • 500ml double cream
    • 150g caster sugar
    • 1 pinch salt
    • 1/2 vanilla bean
    • 6 digestive biscuits, crushed

    1. Combine cream, sugar and salt together in a large bowl. Split vanilla bean lengthways, scrape seeds into the bowl, and stir well.
    2. Pour cream mixture into ice cream maker, and process according to manufacturer's directions. When semi-frozen, sprinkle in the crushed digestive biscuits. Continue to process until desired consistency is reached.


    Vanilla extract can be used in place of the vanilla bean.


    Leftover ice cream can be stored in the freezer for up to three days.
