Easy peasy citrus squeezy ice cream

    Easiest and quickest ice cream in the world to make! No ice cream maker required, no breaking down ice crystals by hand - so simple, the kids can make it.

    Serves: 6 

    • 1 (397g) tin sweetened condensed milk
    • 1 lemon, zested and juiced
    • 1 orange, zested and juiced
    • 300ml (1/2pt) double cream

    1. Pour the condensed milk into a mixing bowl.
    2. Add the juice and zest of both the lemon and orange to the condensed milk, give a good stir and set aside for 30 minutes (the mixture will thicken on standing).
    3. Meanwhile, whip the cream separately so it holds its shape. After the 30 minutes above have expired, add the whipped cream, gently folding it in until all incorporated.
    4. Pour the mixture into a 1L plastic container, cover with lid and freeze for minimum of 5 hours.
    5. Remove the ice cream from the freezer 15 minutes before serving.

    Serving suggestion

    Delicious served with crisp shortbread biscuits.
