Boil berries if possible without any liquid until they have all burst and released plenty of juice. Strain through a sieve. You should get about 350ml of thick berry concentrate. Allow to cool.
Mix the berry concentrate with the sugar, then stir in the soured cream and whipping cream. Mix everything thoroughly and leave in the refrigerator for a few hours to cool down.
Prepare the ice cream according to the instructions given by the ice cream machine's manufacturer. Store in tightly sealed container in the freezer.
