2 tablespoons oil
500g courgette, diced
1 onion, coarsely chopped
1 potato, peeled and diced
1 tablespoon parsley, finely chopped
1L vegetable stock
salt and freshly ground black pepper to taste

In a saucepan, heat the oil and saute the courgette and onion until the onion is translucent. Add the spinach, potato, parsley and stock and simmer for about 20 minutes. Puree in a food processor or using a hand blender.
Stir in the cream, and heat, but do not boil. Season with salt and pepper.
