Fresh fruit traybake

    A lovely almond biscuit base is topped with fresh sweetened whipped cream and fresh fruit of your choice. These fruit slices can be garnished with any kind of berries or other fruit. My children love to help with the garnishing. Strawberries and blueberries are always a popular combination (as they're great to nibble on while you're doing it...)

    Serves: 10 

    • For the pastry
    • 5 eggs
    • 1 pinch of salt
    • 125g marzipan paste
    • 100g sugar
    • 1 teaspoon vanilla extract
    • 75g flour
    • 40g cornflour
    • 1 teaspoon baking powder
    • For the topping
    • 400g cream
    • 1 teaspoon vanilla extract
    • 2 tablespoons icing sugar
    • 1kg berries or fruit (strawberries, raspberries, blueberries, kiwi fruit, apricots, grapes, etc.), chopped

    1. Separate 4 eggs. Beat 4 egg whites with salt until stiff beat and leave to cool in the refrigerator.
    2. Line baking tray with baking parchment or grease well. Preheat the oven to 180 C / Gas 4.
    3. Crumble the marzipan into in a large mixing bowl. Beat the whole egg, egg yolks, sugar, vanilla and marzipan paste until fluffy.
    4. Mix the flour, cornflour and baking powder gradually. Last fold in the beaten egg whites and mix well.
    5. Spread the pastry on the prepared baking tray and bake in preheated oven for about 25 minutes.
    6. Let it cool and cut into pieces. Beat the cream with vanilla and icing sugar until stiff. Cover the individual pieces of pastry with the cream and cover with fruit of your choice.
