Homemade ketchup

    I always make tomato ketchup myself, because then I know what's in it - and I also think it tastes miles better as a result. A great recipe when tomatoes are cheap and you don't know what to do with the tomatoes. It's great for seasoning meat sauces and even goes well on pizzas.

    Serves: 4 

    • 1kg ripe tomatoes
    • 2 red peppers
    • 2 green peppers
    • 200g onions
    • 1 bay leaf
    • 1 sprig lovage
    • 2 teaspoons sweet paprika
    • 400ml vinegar
    • 40g salt
    • 160g sugar
    • 60g cornflour

    1. Cut the tomatoes into pieces, stew until soft and press through a sieve. Liquidise the peppers, onions and spices in a blender.
    2. Cook the tomato pulp and vegetable mixture in a saucepan over a moderate heat, bring to the boil and simmer for at least an hour. Mix the cornflour with water and stir into the tomato mixture. Bring to the boil again.
    3. Pour the hot mixture into a sterile jar and store in the fridge.
