As ripe, sweet mangoes are hard to get, for this heavenly recipe I'm using mangoes out of a tin. Whole mangoes from a tin work just as well, but you just have to pour off the syrup and puree them very well first.

Mix mango pulp with sugar, then stir in soured cream. Mix everything thoroughly and leave to cool for a few hours in the refrigerator.
Prepare the ice cream according to the instructions given by the ice cream machine's manufacturer. Store in tightly sealed container in the freezer.
