This is a simple flourless chocolate cake recipe; I've been making it for years and it is still in my hubby's top five... Serve it with a nice dollop of cream, and don't despair if it collapses - just dust it well with icing sugar.

200g plain chocolate (70% cocoa)
200g caster sugar
4 eggs, separated
double cream, to serve

Preheat oven to 180 C / Gas 4 (160 fan).
Grease a 23cm cake tin, line with parchment and grease again.
Break the chocolate into small pieces and melt it with butter over hot water in a double boiler (or in the microwave).
Beat the egg yolks with half of the sugar. Fold in the melted butter and chocolate mixture.
Beat egg whites until frothy using an electric mixer; gradually add the remaining sugar, beating until stiff peaks form.
Fold in the chocolate mixture and place in prepared tin.
Bake for 25 to 30 minutes, or until a skewer inserted in centre comes out clean, but make sure not to overcook it. Note that cakes of this type will collapse and look flat because no flour is used.
Dust with icing sugar and serve with a dollop of cream.
