1 tablespoon powdered gelatine
8-10 digestive biscuits
2 tablespoons (40g) unsalted butter
500g cottage cheese, passed through a sieve
125ml condensed milk
300g strawberries, crushed
1/2 small apple
1 sprig fresh mint leaves

Soak gelatine in hot water in a bowl and stir till it dissolves completely. Set aside.
Crush biscuits to coarse crumbs and put it into a bowl. Melt butter in the microwave for one minute on High (100%). Add melted butter to the biscuit crumbs and mix.
Transfer the biscuit mixture into a springform tin and press to make a base. Level the surface and keep it in the refrigerator to set.
Put cottage cheese in the mixer bowl. Add yoghurt, condensed milk and crushed strawberries. Mix till smooth. Add the dissolved gelatine and blend for half a minute.
Pour this mixture into the springform tin over the digestive digestive biscuit base. Keep in the freezer for about 6 hours to set well. Garnish with an apple fan and some mint leaves, cut into wedges and serve immediately.
