About this recipe:These puff pastry parcels, filled with a mix of beef, veggies, coconut and curry, are great for serving at get-togethers or as a snack. Mine tend to look a little "rustic", but at least they then look homemade, rather than shop-bought!
300g diced lean beef
1 onion, diced finely
1 carrot, diced finely
1 courgette, dined finely
75g frozen peas
1 clove garlic, crushed
400ml coconut cream
2 tablespoons Masaman curry paste
3 sheets puff pastry, cut into quarters (squares)

Preheat oven to 180 C / Gas 4.
Brown the beef and onion in a frying pan.
Once browned, add remaining ingredients (except for the pastry) and cook on low for around half an hour (or longer depending on how soft you like your veggies).
Remove from heat and allow to cool for a few minutes. Spoon mixture into the centre of each square of puff pastry. Fold squares diagonally, and seal by pressing the edges down with a fork.
Place on a baking tray in the centre of the oven and cook for 20-25 minutes, or until golden.
