About this recipe:
These macaroons are great for afternoon tea or to sell during cake sales and fetes. So easy to make, children can make them too. You can use regular muffin tins or mini-muffin tins.
5 tablespoons caster sugar
2 eggs, beaten
70g plain flour, sifted
1/2 teaspoon baking powder
75g desiccated coconut
1 (397g) tin condensed sweetened milk
1/2 teaspoon vanilla extract
- Preheat the oven to 190 C / Gas 5. Line mini muffin tins with greased paper cases.
- Cream butter and sugar till light. Add eggs one a time. Sift flour and baking powder, add to eggs & butter mixture. Add the coconut, milk and vanilla, and combine well.
- Spoon into paper cases and bake 15-20 minutes till golden. Take out of oven and cool on wire racks.
