    About this recipe: This simple side dish is a tasty alternative to plain boiled carrots. Substitute cashews for your favourite nuts! You can also add salt and pepper to taste.

    Serves: 4 

    • 4 carrots
    • 1 tablespoon honey
    • 30g salted cashews

    1. Bring a saucepan of water to the boil. Peel and cut carrots into rounds.
    2. Add to boiling water and cook till tender (approx 10 minutes). While carrots are cooking, chop nuts coarsely. Drain carrots and return to saucepan, add honey and mix gently till all carrots are coated. Transfer carrots to plate and sprinkle with nuts.
