About this recipe: This is an easy, creamy and satisfying dish. Serve this easy sauce over your favourite pasta - any shape will work a treat. You can easily use turkey mince instead of chicken. Very easy to make and sure to please the entire family. Serve with grated Parmesan for added flavour.


Serves: 4 

  • 2 tablespoons olive oil
  • 500g minced chicken or turkey
  • 1 teaspoon dried oregano
  • 250g mushrooms, finely chopped
  • 6 spring onions, finely chopped (green and white separated)
  • 3 medium tomatoes, peeled, deseeded and chopped
  • 100ml dry white wine
  • 500ml light soured cream
  • chopped fresh parsley to garnish
  • grated Parmesan cheese to serve

  1. Heat a large frying pan or saucepan, add oil then add the chicken mince and the oregano. Cook for 10 minutes.
  2. Add the mushrooms, spring onions, tomatoes and white wine. Season to taste. Add soured cream, stir through, and simmer for about 10 minutes.
  3. Cook pasta in lots of boiling, salted water until al dente; drain. Serve pasta in a bowl and top with the chicken mince and sprinkle with finely chopped parsley and shaved Parmesan.

Beware the sour cream separating as you heat it through - however this was remedied with some cornflour and milk stirred in to turn it back into a creamy sauce. It wouldn't have looked very nice otherwise. - 02 Nov 2015


My husband and I liked this meal, but my 14 yr old son said it was too much of a grown up meal. WAs easy to make and cheap. - 01 Dec 2012
